unobtainable items in gog

making a modpack for gog without the nether part (mainly because suddenly having access to a non sky dimension break the immersion for me) what would some unobtainable/hard items to get be
for example, mushrooms are needed for the earth rune, which is needed for many more items, including terrasteel, meaning the elf portal can not be constructed, leading to many unobtainable items
does anyone know or can find other items like this?

The Fire rune requires nether wart and nether brick. You need blaze rod for a couple of things, including the brewing stands for the alchemy catalyst. (Fel blazes only give blaze powder.) Access to a beacon requires summoning the wither with wither skeleton skulls and soul sand. Also just in general, quartz comes form the nether and is an important ingredient for automation components.

If you don't have access to the nether at all, it's definitely much much harder, but if you have a void nether it's much more doable

Piglins spawn in their specific biome so long as there's a block for them to spawn on, so you can use bartering to get Nether Brick, Soul Sand, and Nether Quartz.

Blazes and Wither Skeletons will spawn within the bounding box of a fortress, even if there's no fortress there. Blaze rods can be converted into nether wart with the catalyst

A wandering trader can sell mushrooms of both varieties

having to find the bounding box for a structure feels kinda silly since its just interacting with f3 finding an invisible thing rather than engaging in the actual game. I dont remember if GoG generates structures by default though I assume it does for this very reason.
I will also add that having to wait for a wandering trader is probably the weakest point of GoG. I remember playing GoG with a few other mods and I just had to cheat and add a recipe for bamboo because it was impossible to get without a wondering trader at the time (I think this has been changed since but I don't remember)

Mara666 GoG does generate structure bounding boxes. Finding structure bounding boxes is a very vanilla-ish sort of thing and if we can somehow incorporate it into lore and design a good item to help find them, I'd be inclined to keep the structure-exclusives as they are currently.
Trader exclusives are annoying but maybe we can add ways to speed up trader spawns in GoG too. Generally I'd lean towards keeping vanilla's resource acquisition paths, but perhaps making them easier or less time-consuming to access.
